Chicken Parmesan Sandwich

Inspired by Heidi's Brooklyn Deli.

During the last four years, it seems like some of our favorite things we've found in Vegas are places to eat.  One place we absolutely love is Heidi's Brooklyn Deli, which has become somewhat of a lunchtime tradition among the UNLV dental students.  The food (including the bread) is made fresh daily, and everything we've tried so far has been delicious.  Some of our favorite sandwiches are the chicken salad, the reuben, the Cajun turkey with avocado, and the chicken parmesan.  So good!  I love getting their chocolate chip cookies and macaroni salad, too (which is amazing because I'm not a macaroni salad person).  Whenever we make chicken parmesan, we use the leftovers in our imitation of the sandwich at Heidi's.

Chicken parmesan, thickly sliced (at least 1/2 breast per sandwich)
Marinara sauce
Fresh mozzarella cheese, shredded

Spread a generous amount of marinara sauce on one piece of bread.  Layer chicken slices over marinara.  Cover with mozzarella cheese.  Toast chicken-covered piece of bread and empty piece (or broil in the oven if don't have a toaster oven) until bread is toasty and cheese is melted.  Put sandwich together, slice (if desired), and dig in!

Note:
- We like to use this recipe for chicken parmesan, which we got from a friend of ours.

Chicken Parmesan

Adapted from Rachel Merkley.

4-6 chicken breasts, flattened to 1/2" thickness
1-1 1/2 cups bread crumbs (I use whole wheat)
1-1 1/2 cups parmesan cheese (finely grated crumb kind)
1 tsp. garlic powder
1 tsp. onion powder
1/2 tsp. oregano
1/2 tsp. marjoram
1/2 tsp. basil
1/2 tsp. salt
1/4 tsp. pepper
2 eggs
1/2-3/4 cup flour
Marinara sauce
Fresh mozzarella cheese
Canola oil

Place flour in a shallow dish.  Beat eggs in another shallow dish with a couple tablespoons of water.  Combine bread crumbs, parmesan cheese, garlic powder, onion powder, oregano, marjoram, basil, salt, and pepper in another bowl.

Add enough oil to a large, deep pan to be about 1/4-1/2" deep.  Heat over medium to medium-high.

Dip flattened chicken breasts in flour, then eggs (allow to drip excess), and then coat in bread crumb mixture.  Carefully place coated chicken in hot oil just long enough to brown the outside (a minute or two).  Chicken will not be cooked through!

Place chicken in a large oven-safe casserole dish coated with cooking spray.  Top generously with marinara sauce and a good amount of fresh mozzarella cheese.

Bake at 375F for about 25 minutes, or until chicken is cooked through.

Note:
-These leftovers are great in chicken parmesan sandwiches!

Quick Fettuccine Cacciatore

From Kraft Food & Family (Spring 2006).
Prep: 10 min / Cook: 15 min
Serves: 4-6

8 oz fettuccine, uncooked
2 tsp. vegetable or canola oil
1 lb. boneless skinless chicken breasts, chopped
1 cup sliced green or red bell peppers
1 cup sliced mushrooms
1 can (14.5 oz) diced tomatoes, undrained
1/4 cup Italian dressing
1/4 cup shredded mozzarella cheese
1/4 cup shredded parmesan cheese
1/4 cup chopped fresh basil leaves

Cook pasta as directed on package.  Meanwhile, heat oil in large skillet on medium-high heat.  Add chicken; cook and stir until no longer pink.  Add peppers; cook 3 minutes, stirring occasionally.

Stir in tomatoes, mushrooms, and dressing.  Reduce heat to medium-low; simmer 5 minutes or until chicken is cooked through.

Toss pasta with chicken mixture.  Sprinkle with cheese and basil.

Notes:
- I chose to use no-salt added tomatoes and pureed them slightly.

Scrumptious Vegetable Lasagna

Adapted from Healthy Cooking (Feb./March 2010), page 49.

Prep: 45 min. + resting / Bake: 40 min. + standing
Yield: 12 servings
 9 whole wheat lasagna noodles
1 medium yellow summer squash, cut into 1/4" slices
1 medium zucchini, cut into 1/4" slices
1/2 lb. fresh mushrooms, sliced
1/2 medium sweet onion, diced
1 eggplant, thinly sliced
1 sweet potato, thinly sliced
1 yam, thinly sliced
1 Tbs. olive oil
1 jar (25 oz) marinara sauce
1 carton (15 oz) fat-free ricotta cheese
12 slices reduced-fat provolone cheese, halved
2 cups (8 oz) shredded part-skim mozzarella cheese
1 cup shredded Parmesan cheese

Arrange slices of eggplant on wire racks over paper towels; liberally salt both sides and allow to rest for about 1 hour.  Squeeze out excess moisture.  Chop.

Cook noodles according to package directions.

Meanwhile, boil sweet potato and yam slices in salted water until softened but not all the way cooked.  Drain carefully.

Heat oil in a large skillet; saute squash, zucchini, onion, and eggplant until tender.  Add mushrooms during the last minute or two.  Gently stir in sweet potato and yam.

Drain noodles.  Rinse in cold water and drain again.

Spread 1/4 cup marinara in an 11x17" baking dish coated with cooking spray.  Top with six noodles, 1 cup marinara sauce, 1/3 vegetable mixture, 1/2 cup ricotta cheese, 8 half slices of provolone cheese, 2/3 cup mozzarella cheese, and 1/3 cup Parmesan cheese.  Repeat layers twice, or until you run out of ingredients.

Cover and bake at 375F for 30 minutes.  Uncover; bake 10-15 minutes longer or until bubbly.  Let stand 10 minutes before cutting.

Notes:
- Yes, there is a difference between sweet potatoes and yams.  But I guess you could use two of one of them if you prefer.  I just couldn't decide which one I wanted, so I used one of each.
- I made this in two 8x8" baking dishes and froze one of them.  I'm assuming you could make it in an 11x17" dish.
- I'm totally guessing at measurements in the layering process, to tell you the truth.  I was in a hurry and had modified the recipe enough that I didn't bother with exact amounts at that point.  It probably wouldn't hurt to have more marinara sauce than the recipe lists, though.
- I would use more sauce next time.

Linguine with Clam Sauce

From Dad Larsen.

Bring to a good boil:
6 cups water
Juice from 2 small cans chopped clams
Salt

Add to above:
1 lb. linguine noodles

Prepare separately in frying pan, cooking slightly to blend flavors:
4 oz. butter
2 cans chopped clams
4 Tbs. fresh chopped parsley
3 Tbs. fresh chopped basil
1 tsp. fresh minced thyme
1 Tbs. minced garlic
Pepper to taste

Just before linguine is ready, bring to a boil and add to clam/herb mix:
1 cup heavy cream

Drain linguine noodles, place on large warm platter, and quickly pour clam/herb/cream sauce over it.

Add to linguine mix and toss:
4 oz. melted butter (in addition to above)
½ cup shredded parmesan cheese

Salt to taste, toss, and serve.

Shelby's Lasagna

Prep./Cook: 1 hour 20 min

1 lb. ground beef
12 oz. cottage cheese
1 (12 oz.) bag grated mozzarella
1 jar Newman’s marinara/pasta sauce
1 box wide lasagna noodles
1 cup water

Brown hamburger. Drain grease and add jar of marinara. Add water to the bottle and swish it around to get the rest of the sauce. Add to marinara and hamburger. Bring to a boil.

In ungreased 9x13 pan, layer meat, noodles, cottage cheese, and mozzarella. Repeat two more times. Finish with a layer of meat sauce on top.

Cover pan with tin foil and cook for 1 hour at 350 or 375˚F.

Easy Baked Manicotti

From Kraft Foods.

Prep: 25 min / Cook: 40 min.

2 cups spaghetti sauce, divided
1 egg, lightly beaten
1 ¾ cups ricotta cheese
1 ½ cups shredded mozzarella cheese
½ cup grated parmesan cheese
¼ cup pesto
14 manicotti shells, cooked, rinsed in cold water

Preheat oven to 350°F. Spread ¾ cup of the spaghetti sauce in bottom of 9x13” baking dish. Mix egg, cheeses, and pesto until well blended. Spoon cheese mixture into large resealable plastic bag. Using scissors, cut off small hole from one of the corners of bag (I just use one of those frosting bags).

Fill manicotti shells, one at a time, squeezing cheese mixture into both sides of each shell. Place manicotti over sauce in baking dish; pour remaining 1 ¾ cups spaghetti sauce over manicotti. Cover with foil.

Bake 40 min. or until heated through.

Make-ahead option: Cook the manicotti shells up to 1 day ahead. Place on a greased tray, cover with plastic wrap and refrigerate until ready to fill.
