Mexican Chicken Pizza with Cornmeal Crust

Adapted from Eat Better America 2012 calendar.
Crust:
1 1/2 cups all-purpose flour
1 Tbs. sugar
1 1/4 tsp. regular active dry yeast
1/4 tsp. coarse salt (kosher or sea)
3/4 cup warm water
1 Tbs. olive oil
1/3 cup yellow cornmeal
Additional cornmeal

2 cups shredded Mexican cheese blend
1 1/2 cups shredded cooked chicken breast
1 can (14.5 oz) fire-roasted diced tomatoes
1 tsp. ground cumin
1 tsp. smoked paprika
1/4 tsp. chipotle chile powder (regular or Mexican varieties are good, too)
1/2 tsp. oregano
1/2 medium yellow bell pepper, chopped
1-2 sliced green onions
1/4 cup chopped fresh cilantro
1 avocado, diced
Sour cream

Heat oven to 450F.  In a medium bowl, mix 3/4 cup flour, sugar, yeast, and salt.  Stir in warm water and oil.  Beat with electric mixer on low speed for 30 seconds.  Beat on high speed for 1 minute.  Stir in 1/3 cup cornmeal and remaining flour to make a soft dough.

On lightly floured surface, knead dough until smooth and elastic, about 5 minutes.  Cover; let rest for 10 minutes.

Meanwhile, mix chicken with cumin, paprika, chile powder, oregano, and the juice from the tomatoes.

Spray a large cookie sheet with nonstick spray; sprinkle with additional cornmeal.  On cookie sheet, press dough into 10x14" rectangle; prick with fork.  Bake 8-10 minutes or until edges just begin to turn brown.

Sprinkle with 1 cup of the cheese blend.  Top with chicken, tomatoes, bell pepper, and green onions.  Sprinkle with remaining cheese.  Bake 6-8 minutes longer or until cheese is melted and edges are golden brown.  Top with cilantro, sour cream, and avocados.

Quick Fettuccine Cacciatore

From Kraft Food & Family (Spring 2006).
Prep: 10 min / Cook: 15 min
Serves: 4-6

8 oz fettuccine, uncooked
2 tsp. vegetable or canola oil
1 lb. boneless skinless chicken breasts, chopped
1 cup sliced green or red bell peppers
1 cup sliced mushrooms
1 can (14.5 oz) diced tomatoes, undrained
1/4 cup Italian dressing
1/4 cup shredded mozzarella cheese
1/4 cup shredded parmesan cheese
1/4 cup chopped fresh basil leaves

Cook pasta as directed on package.  Meanwhile, heat oil in large skillet on medium-high heat.  Add chicken; cook and stir until no longer pink.  Add peppers; cook 3 minutes, stirring occasionally.

Stir in tomatoes, mushrooms, and dressing.  Reduce heat to medium-low; simmer 5 minutes or until chicken is cooked through.

Toss pasta with chicken mixture.  Sprinkle with cheese and basil.

Notes:
- I chose to use no-salt added tomatoes and pureed them slightly.

Green Chili Sauce for Pork or Poultry

Adapted from Weber's On the Grill.

Yield: about 1 cup
1 Tbs. roughly chopped roasted green chilies
1 medium garlic clove
1 Tbs. lime juice
1/2 cup lightly packed fresh cilantro leaves
1/4 tsp. kosher salt
1/4 cup sour cream
1/4 cup mayonnaise

In a food processor or blender, puree the roasted green chilies, garlic, lime juice, cilantro leaves, and salt. Add the sour cream and mayonnaise and process until smooth.

Notes:
- Matt brushed the sauce onto the chicken prior to grilling it.  We wished we had reserved some for serving, but oh well!
- Although you can roast your own chilies, we opted to just use some diced green chilies from a can

Shrimp Enchiladas

Adapted from Mel's Kitchen Cafe.

Prep: 20-30 min / Cook: 30-35 min.
Yield: 8-10 enchiladas

Cheese Sauce:
1/2 red bell pepper, chopped
1/2 green bell pepper, chopped
1/2 small onion, diced
2 Tbs. butter
1/2 tsp. oregano
1/2 tsp. salt (optional)
1/4 tsp. garlic powder
1/4 tsp. cayenne pepper
1/4 tsp. black pepper
1 Tbs. flour
3/4 cup fat-free half-and-half
1 1/2 cups Monterey Jack or Pepper Jack cheese
1/2 cup reduced-fat sour cream

Enchiladas:
2 Tbs. butter
1 1/2 lbs. shrimp, peeled, deveined, and chopped into bite-size pieces
2 cups chopped ripe tomatoes
1/2 red bell pepper
1/2 green bell pepper
1/2 small onion, diced
1 1/2 cups Monterey Jack or Pepper Jack cheese
8-10 soft taco size flour tortillas

To make cheese sauce, saute peppers and onion in butter until crisp-tender.  Add oregano, salt, garlic powder, pepper, cayenne pepper, and flour; blend well and cook, stirring constantly for about a minute.  Whisk in half-and-half and continue cooking for 3 minutes, or until slightly thickened.  Add cheese; stir until melted.  Add sour cream; stir to blend.  Set aside.

In another skillet, melt butter.  Saute onion and peppers until crisp-tender.  Add shrimp; saute until pink (don't overcook!).  Add tomatoes and 1/2 of the cheese sauce.  Spoon about 1/3-1/2 cup shrimp mixture into each tortilla.  Sprinkle a bit of cheese on top of filling, leaving some to sprinkle on top of enchiladas.  Roll the enchiladas up tightly.  Arrange seam side down in a 9x13" glass baking dish.  Spoon remaining cheese sauce over tortillas and sprinkle with remaining cheese.

Bake at 350F for 30-35 minutes.

Notes:
- Don't forget to add the cheese into the enchiladas.  I forgot that step and had to go back and unroll each one to add it--not easy when they've already absorbed some of the liquid from the filling.  They weren't pretty, hence no picture.
- The original recipe uses whipping cream and regular sour cream, which I'm sure makes richer enchiladas.  Having jumped straight to the no-fat and low-fat ingredients, I have nothing to compare it to.
- If you use small shrimp, I don't see why you'd need or want to chop them up.

Skillet Ziti with Chicken and Broccoli

Adapted from Simple and Delicious (Feb./March 2011, page 30).

Prep: 20 min / Cook: 20-30 min.
Yield: 4-6 servings
1 lb. chicken, cut into short 1/4" strips
1 Tbs. butter
1 Tbs. olive oil
1 small onion, diced
1 clove garlic, minced
1/4 tsp. crushed red pepper flakes
1/4 tsp. dried oregano
2 cups reduced-sodium chicken broth
1 cup fat-free milk
2 1/2 cups uncooked ziti (I used mini)
1 bunch broccoli, cut into florets
1 red bell pepper, roasted and chopped or julienned*
1/2 cup grated Parmesan cheese
Salt and pepper to taste

Sprinkle chicken with salt and pepper, if desired.  Saute in a large skillet in butter until no longer pink.  Remove.

In the same skillet, saute onion in olive oil until tender.  Add garlic, pepper flakes, and oregano; cook 1 minute longer.  Stir in broth and milk; bring to a boil.  Add ziti; cover and cook 7-8 minutes or until ziti is tender, stirring occasionally.  Add zucchini and red peppers during last 5 minutes of cooking.

Return chicken to skillet; heat through.  Sprinkle with cheese.  Season with salt and pepper to taste.

*Brush bell pepper with olive oil and season with salt and pepper.  Roast in a 375F oven for about 15-20 minutes, rotating about every 5 minutes.  Allow to cool slightly before removing stem, seeds, skin, etc.

Notes:
- You can buy jars of roasted red peppers if you don't want to roast it yourself.  The original recipe called for 1 cup.
- The "sauce" is a little thin, but it really didn't bother me.  I don't think it was supposed to be a sauce in the sense that Alfredo and marinara are--you know, thick and obviously there.

Mesa Grill Pretzels

Adapted from Bobby Flay's Burgers, Fries, and Shakes, page 33.

Yield: 20 pretzels
1/4 cup yellow cornmeal
3/4 cup warm water
1/4 oz. yeast
2 tsp. light brown sugar
1 large egg
3-4 cloves roasted garlic, peeled and pureed
Kosher salt
1 tsp. freshly ground black pepper
3/4 cups all-purpose flour, plus more for rolling
3 poblano chiles, roasted, peeled, seeded, and finely diced
Cayenne pepper

Line 2 baking sheets with Silpat liners or parchment paper that has been lightly sprayed with nonstick cooking spray, and sprinkle with an even layer of the cornmeal over each.

Combine the water and yeast in a large bowl and mix together with your fingertips until the yeast has dissolved.  Whisk in the sugar, egg, and garlic until combined.  Add 2 tsp. salt, the pepper, 3 cups flour (add more if necessary to form a smooth dough), and poblanos; mix until combined.

Transfer the dough to a lightly floured surface and knead until the dough is smooth.  Place the dough in a lightly greased large bowl, cover the top with plastic wrap or a clean kitchen towel, and let rise in a warm area until doubled in size, about 1 1/2 hours.

Preheat the oven to 350F.

Remove the dough from the bowl and divide in half.  On a floured work surface, roll each half out into a 12x12" square.  Cut each square into 10 even strips.  Hold the dough by the ends; stretch it to the length of one of the baking sheets, keeping the shape as uniform as possible.  Place the pretzels on the baking sheets, spacing 1" apart.  Let rise, uncovered, in a warm place for 30 minutes.

Season the tops with a combination of kosher salt and cayenne pepper.  Bake until crisp and golden brown, 20-25 minutes.  Remove to baking racks and let cool.

Roasting Garlic
Preheat the oven to 300F.  Separate the cloves of a head of garlic, but do not peel.  Drizzle the cloves with olive oil and season with salt and pepper.  Wrap the garlic securely in aluminum foil and place on a baking sheet.  Roast in the oven for 45 minutes to 1 hour, until very soft.  Squeeze the pulp from the skins, discarding the skins.  Roasted garlic will keep covered and stored in the refrigerator for up to 5 days.  (If you're doing less than 1 head of garlic, you'll want to check it before the 45 minutes.)

Roasting Peppers and Chiles
Preheat the oven to 375F.  Brush the peppers with olive oil and season with salt and pepper.  Place in the oven on a rimmed baking sheet and rotate until charred on all sides, 15-20 minutes.  Remove from the oven and place the roasted peppers in a bowl, cover with plastic wrap, and let sit for 15 minutes to allow the skin to loosen.  Then peel, halve, and seed.  Treat chiles exactly the same way as the peppers.  Roasted peppers and chiles can be covered and stored for up to 5 days in the refrigerator.

Notes:
- The original recipe calles for 1 head of garlic, but that seemed like a bit much to me.  It also calls for jalapeno chile pepper, which I've never seen, so I used cayenne pepper.
- Bobby says to roll the dough out into a 12x12" square about 1" thick.  I honestly wonder if it was a misprint because I can't figure out how that would have been possible . . . unless my dough didn't rise nearly enough.  My squares were about 1/4" thick.

Squash and Veggie Couscous

Adapted from Simple and Delicious (June/July 2010), page 24.

Prep/Total: 25 min.
Yield: 4 servings
1 1/4 cup chicken broth
3/4 cup uncooked couscous
1 medium yellow summer squash, chopped
1 medium zucchini, chopped
3/4 cup chopped carrot
1/2 cup chopped red bell pepper
1/4 cup chopped sweet onion
2 Tbs. butter
1 Tbs. Italian dressing
1/2 tsp. Italian seasoning
1/2 tsp. salt-free lemon-pepper seasoning

In a small saucepan, bring broth to a boil.  Stir in couscous.  Remove from the heat; cover and let stand for 5-10 minutes or until broth is absorbed.

Meanwhile, in a large skillet, saute the squash, carrot, red pepper, and onion in butter until tender.  Stir in seasonings.  Fluff couscous with a fork; toss with vegetable mixture.

Notes:
- Use reduced-sodium chicken broth to lower the sodium in this dish even more.
- You could add 1/3 cup chicken broth and leave the dressing out.
- I opted for a red pepper instead of green because they're sweeter.
- Meatless Version: Replace chicken broth with vegetable broth and use olive or canola oil instead of butter.

Red Chile-Honey Glazed Salmon with Black Bean Sauce and Jalapeno Crema

From Bobby Flay's Mesa Grill Cookbook, pages 116-117.

Serves 4.

I just have to say that Bobby Flay is a culinary genius.  We had this for dinner last night and were still talking about how delicious it was when we went to bed.  It's takes a fair amount of time to prepare the black bean sauce (start the night before), but it was definitely worth it.  Even Matt loved this salmon, and he really doesn't like to eat fish unless it's raw.
Jalapeno Crema (makes about 1/2 cup)
1/2 cup crema, creme fraiche, or sour cream
1 large or 2 small jalapeno chilies, roasted, peeled, seeded, and chopped

Brush jalapenos with olive oil and sprinkle with salt and pepper.  Place on a rimmed baking sheet and bake for 15-17 minutes at 375F, rotating a few times to ensure even roasting.  Put chilies in a glass bowl and cover with plastic wrap; let sit for 15 minutes.  Remove skin.  Cut in half lengthwise and scrape out seeds.  Chop.

Combine the crema and jalapenos in a food processor and process until smooth.  (Alternatively, you could finely chop the jalapenos by hand and stir them into the crema.)  Season with salt and pepper and refrigerate for 30 minutes before serving.  This can be made and refrigerated up to 1 day in advance.

Black Bean Sauce
1 1/2 cups dried black beans
1 small red onion, coarsely chopped
2 cloves garlic, peeled
2 chipotle chiles in adobo sauce, chopped
1 tsp. ground cumin
Kosher salt

Red Chile-Honey Glazed Salmon
1/3 cup honey
1 Tbs. ancho chile powder
1 Tbs. Dijon mustard
Kosher salt and freshly ground black pepper
Four 8-oz skin-on salmon filets
2 Tbs. canola oil
Jalapeno Crema
Thinly sliced green onions, white and green parts, for garnish (optional)

Pick over the beans and discard any stones.  Put in a bowl, cover with water, and let soak overnight.

Drain the beans and combine with the onion, garlic, chipotles, and cumin in a medium saucepan and add just enough cold water to cover by an inch; bring to a boil over high heat.  Reduce the heat and simmer, adding more water if the beans appear dry, until the beans are tender, 1 to 1 1/2 hours.

Transfer the mixture to a food processor or blender (in batches, if needed) with a slotted spoon, add 1 cup of the cooking liquid, and process until almost smooth; the sauce should still be a little chunky.  Season with salt.  If the sauce is too thick, thin with more of the cooking liquid or with water.  This can be made up for 4 hours in advance and refrigerated.  Reheat before serving.

To make the glaze for the salmon, whisk together the honey, ancho powder, and mustard in a small bowl and season with salt and pepper.

Preheat a grill pan or large nonstick saute pan over high heat.  Brush the salmon with the oil on both sides and season with salt and pepper.  Place the salmon in the pan, skin side down, and cook until golden brown and a crust has formed, 3 to 4 minutes.  Brush the top of the salmon with some of the glaze, flip over the filets, and continue cooking until a crust has formed and the salmon is cooked to medium, about 2 minutes more.  The salmon will be pink in the center.

Spoon some of the black bean sauce onto 4 plates and drizzle with some of the jalapeno crema.  Set the salmon in the center, glazed side up, brush with more of the glaze, and garnish with green onion.

Notes:
- We ate this with rice.  I think a salad or some freshly steamed vegetables would also accompany it well . . . if you have room to eat them!
- I think our salmon filets were 6 or 7 oz. each, and that was enough.  We also used skinless filets, and that didn't seem to be a problem.
- If you have trouble finding the chipotle chilies, look in the section of your grocery store that has the Mexican foods.  The chilies I buy are in probably an 8-oz can.
- I ended up adding all of the cooking liquid to the bean puree before I thought it had reached the right consistency, so don't be afraid to keep adding liquid until the mixture looks right to you!
- I divided the glaze into two bowls: one for brushing the raw salmon and one for brushing the cooked salmon.
- Be careful flipping the salmon--mine stuck a little.
- I think I cooked our salmon a little longer on the second side than the recipe calls for, maybe a minute or two.  And then I turned the heat off and left it there while I put the sauces on the plates.
- Maybe it's because I used sour cream, but my Jalapeno Crema wasn't really drizzling consistency.  It was more globbing consistency.  Oh well.  Still tasted good.

Bolo Burger

From Bobby Flay's Burgers, Fries, and Shakes, page 28

Serves 4.
Piquillo Pepper-Smoked Paprika Aioli
1/2 cup mayonnaise
2 cloves garlic, chopped
2 jarred piquillo peppers, drained
2 tsp. smoked sweet Spanish paprika
1/2 tsp. kosher salt

Burgers
1 1/2 lbs. ground chuck (80/10) or ground turkey (90/10)
Kosher salt & freshly ground black pepper
3 Tbs. canola oil
4 sesame seed hamburger buns, split; toasted, if desired
8 slices Manchego cheese
8 paper-thin slices Serrano ham

To make the aioli, combine the mayonnaise, garlic, peppers, paprika, and salt in a food processor and process until smooth.  Cover and refrigerate at least 30 minutes before serving.  The aioli can be prepared 1 day in advance, tightly covered, and refrigerated.

Divide the meat into 4 equal portions (about 6 ounces each).  Form each portion loosely into a 3/4-inch-thick burger and make a deep depression in the center with your thumb.  Season both sides of each burger with salt and pepper.  Cook the burgers, using 1 1/2 Tbs. of the oil (click HERE for Bobby's burger cooking times).

Place the bun bottoms on a flat surface and spread half of the aioli over them.  Top each one with a slice of cheese, then a slice of the ham, then a burger, another slice of ham, and finally another slice of cheese, in that order.  Spread the rest of the aioli on the bun tops and cover each burger with a top.

Brush the tops of the buns with the remaining 1 1/2 Tbs. oil and place on the grill, griddle, or saute pan, top side down.  Using a heavy-duty metal spatula, press down on the bottom of the buns and grill until the tops are a light golden brown, 1 to 2 minutes.  Turn the burgers over and continue cooking, pressing down on the tops, until the bottoms are light golden brown and the cheese has melted, about 1 minute longer.  Serve immediately.

Notes
- We couldn't find piquillo peppers, so we used jarred, fire-roasted red peppers.
- We also couldn't find Manchego cheese (I was in a hurry and only checked one store for these things--later I found the cheese), so we used Monterey Jack.
- We don't have smoked sweet Spanish paprika, so I used plain old smoked paprika (still not the same as regular paprika).
- Like I've mentioned with all his other burgers so far, we make our patties thinner than he does because we buy big buns and want the burger to be in every bite.
- As with all the other burgers, I follow the beef requirement somewhat loosely.  Sometimes I get 80/20, other times I get 85/15 or even 90/10.  I don't always buy 1 1/2 lbs, either.  It just depends on how fattening I feel like we can make our burgers that particular day.
- The aioli reminded me a lot of the red pepper sauce a Quiznos.  So if you ever want their red pepper sauce on your homemade sandwich, make Bobby's aioli here!

Santa Fe Burger

From Bobby Flay's Burgers, Fries, and Shakes, page 63.

Serves 4.
Burgers
1 large poblano chile
2 1/2 Tbs. canola oil
Kosher salt and freshly ground pepper
1 1/2 lbs. ground chuck (80/20) or ground turkey (90/10)
4 hamburger buns, split; toasted, if desired
12 blue or yellow corn tortilla chips

Queso Sauce
1 Tbs. unsalted butter
1 Tbs. all-purpose flour
1 1/2 cups whole milk
8 oz. Monterey Jack cheese, coarsely grated (about 2 cups)
Kosher salt & freshly ground black pepper

Preheat oven to 375 degrees F.

Put the chile on a rimmed baking sheet, rub with 1 Tbs. of the oil, and season with salt & pepper. Roast in the oven until the skin on the chile is blackened, about 15-20 minutes. Remove the chile from the oven, place in a bowl, cover with plastic wrap, and let the chile steam for 15 minutes. Peel, stem, and seed the chile, and then coarsely chop it.

To make the queso sauce, melt the butter in a small saucepan over medium heat. Whisk in the flour and cook for 1 minute. Add the milk, increase the heat to high, and cook, whisking constantly, until slightly thickened, about 5 minutes. Remove from the heat and whisk in the cheese until melted; season with salt and pepper. Keep warm.

Divide the meat into 4 equal portions (about 6 oz. each). Form each portion loosely into a 3/4"-thick burger and make a deep depression in the center with your thumb. Season both sides of each burger with salt and pepper. Cook the burgers, using the remaining 1 1/2 Tbs. oil. (Click HERE for Bobby's cooking times for beef burgers.)

Place the burgers on the bun bottoms and top each with a few tablespoons of queso sauce, chips, and some of the poblano. Cover with bun tops and serve immediately.

Notes
- We're trying to be a little healthier, so we used 1 lb. of 85/15 ground beef. The burgers were a little smaller and not quite as juicy, but with the queso sauce it wasn't a big deal.
- As with all of his burgers, we make the patties a bit thinner so they fit the buns we buy.
- We also use less oil because we cook in a nonstick skillet.
- We decided it would probably be a good idea to turn the chile halfway through the roasting time.
- The queso sauce is very mild but tastes great. Next time we might try mixing in some pepper jack cheese. The sauce is also great as a chip dip and would probably be good as fondue, too. (*Second time around: I like the queso sauce just the way it is, but a small amount of pepper jack would probably be good if you want more spice.)

California Burger

From Bobby Flay's Burgers, Fries, & Shakes, page 34.

Makes 4 burgers.
Avocado Relish:
2 ripe Haas avocados, halved, pitted, peeled, and coarsely chopped
1/2 small onion, finely diced
1 jalapeno chile, finely diced
Juice of 1 lime
Kosher salt & freshly ground black pepper

Burgers:
1 1/2 lbs. ground chuck (80/20) or ground turkey (90/10)
Kosher salt & freshly ground black pepper
1 1/2 Tbs. canola oil
4 slices Monterey Jack cheese
4 hamburger buns, split; toasted, if desired
1 small bunch of watercress
4 slices ripe beefsteak tomato

To make the avocado relish, combine the avocados, onion, jalapeno, lime juice, and cilantro in a small bowl and season with salt and pepper. The relish can be made up to 1 hour in advance and kept at room temperature.

Divide the meat into 4 equal portions (about 6 oz. each). Form each portion loosely into a 3/4"-thick burger and make a deep depression in the center with your thumb. Season both sides of each burger with salt and pepper.

Cook the burgers, using the oil and topping each one with a slice of cheese and a basting cover during the last minute of cooking. (Click HERE to see Bobby's cooking times for burgers.)

Place the burgers on the bun bottoms and top each one with a few sprigs of watercress, a slice of tomato, and a dollop of the avocado relish. Cover with bun tops and serve immediately.

Notes:
- I use less oil because I cook in a nonstick pan.

Nacho Burger

From Bobby Flay's Burgers, Fries, & Shakes cookbook, page 53.

Prep: Lots--the pickled jalapenos need to pickle for at least 24 hours
Makes 4 burgers
Tomato-Chipotle Salsa:
3 Tbs. red wine vinegar
1 Tbs. canola oil
2 tsp. pureed canned chipotle chiles in adobo
3 plum tomatoes, seeded and finely diced
2 Tbs. finely diced red onion
2 Tbs. finely chopped fresh cilantro leaves
Kosher salt

Avocado Relish:
2 ripe Hass avocados, halved, pitted, peeled, and coarsely chopped
1/2 small onion, finely diced
1 jalapeno chile, finely diced
Juice of 1 lime
1/4 cup finel chopped fresh cilantro leaves
Kosher salt & freshly ground pepper

Burgers:
1 1/2 lbs. ground chuck (80/20) or ground turkey (90/10)
Kosher salt & freshly ground black pepper
1 1/2 Tbs. canola oil
8 slices Monterey Jack cheese, each 1/4" thick
4 hamburger buns, split; toasted, if desired
Avocado Relish
4 Pickled Jalapenos, thinly sliced
1/2 cup coarsely crumbled blue corn tortilla chips

To make the salsa, stir together the vinegar, oil, and chipotle puree in a medium bowl. Add the tomatoes, onion, and cilantro and mix to combine; season with salt. The salsa can be made 4 hours in advance, covered, and refrigerated. Bring to room temperature before using.

To make the avocado relish, combine the avocados, onion, jalapeno, lime juice, and cilantro in a small bowl and season with salt and pepper. The relish can be made up to 1 hour in advance and kept at room temperature.

3. Divide the meat into 4 equal portions (about 6 ounces each). Form each portion loosely into a 3/4"-thick burger and make a deep depression in the center with your thumb. Season both sides of each burger with salt and pepper.

Cook the burgers, using the canola oil and topping each one with 2 slices of cheese and a basting cover during the last minute of cooking. (Click HERE to see Bobby's cooking times for burgers.)

Place the burgers on the bun bottoms. Top each burger with some of the avocado relish, some tomato-chipotle salsa, and then pickled jalapenos and blue corn chips. Cover with the burger tops and serve immediately.

Notes:
- I halved the pickled jalapeno recipe (the original is in another post), and I still have most of them in my fridge. He's got a couple other burgers in the book that call for them, but perhaps it would be wise to quarter it next time.  I've also used store-bought pickled jalapeños instead of homemade ones, and that was just fine.  Check in the Latino section of your store.
- I realized late at night while I was pickling the jalapenos that I didn't have cumin seeds or white wine vinegar. I discovered that caraway seeds can substitute cumin seeds at half quantity (so the recipe above would use 1/4 tsp. caraway seeds instead of 1/2 tsp. cumin seeds). My white wine vinegar substitute likely wasn't what it should have been, but I used what I had . . . which would translate to 1/2 cup white vinegar and 1/2 cup apple cider vinegar.
- We used one slice of cheese on each burger--I imagine two would have been heavenly, but I really couldn't bring myself to put 1/2" of cheese on each burger!!
- We don't have a basting cover, so I just used the lid of the saute pan I was cooking the burgers in.
- We only used 1 pickled jalapeno for the four burgers instead of one each. Then again, we all know Bobby likes things to have quite a bit of kick. ;)

Pepper Steak

From Mom Larsen.

1 1/4 lbs. flank steak, sliced thinly across the grain
2 Tbs. cornstarch, divided
2 Tbs. soy sauce, divided
2 tsp. sugar
2/3 cup chicken broth
1 clove garlic, minced
3 slices ginger root or 1/2 tsp. ground ginger
2 bell peppers, cut in strips
1/2 onion or 4 green onions, sliced
2 tsp. hoisin sauce
3-4 Tbs. oil, divided
Rice or noodles

Mix 1 Tbs. cornstarch, 1 Tbs. soy sauce, garlic, ginger, and 1 Tbs. oil in a large bowl.  Add steak and stir to coat.  Set aside.

In a small bowl, mix together remaining cornstarch and soy sauce with sugar and broth.  Set aside.

Stir-fry peppers and onions in 1 Tbs. oil for 2-3 minutes or until tender-crisp.  Remove from pan.

Stir-fry beef in two batches in 1-2 Tbs. oil until meat is brown on the outside but still pink in the middle.

Add hoisin sauce and stir to coat.  Remove meat from pan.

Add gravy ingredients to pan and cook, stirring until it begins to thicken. Return meat and vegetables to pan and stir to combine.

Serve over rice or Chinese noodles.

Notes:
- Consider using 1 ½ times the gravy ingredients.
- Other cuts of beef may be used instead of flank steak.
- Add extra sliced peppers or some sliced bamboo shoots and/or sliced water chestnuts for more vegetables.
- This recipe can also be used for Beef and Chinese Pea Pods, substituting 1/4-1/2 pound pea pods for sliced peppers.
- Can also substitute chicken for beef.

Turkey Tostadas

From Simple and Delicious (Sept./Oct. 2007), page 26.

Prep/Total Time: 25 min.
Yield: 6 servings


1 package (20 oz.) lean ground turkey
½ cup chopped onion
½ cup chopped green pepper
1 tsp. vegetable or canola oil
¾ cup water
1 envelope taco seasoning (or 3 1/2 Tbs. Homemade Taco Seasoning Mix)
1 can (15.5 oz.) hominy, rinsed and drained
12 tostada shells
3 cups shredded lettuce
1 cup (4 oz.) shredded Mexican cheese blend
1 cup chopped tomato
1 cup cubed avocado

In a large skillet, cook the turkey, onion, and green pepper in oil over medium heat for 5 minutes or until meat is no longer pink; drain. Stir in the water, taco seasoning, and hominy. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes or until heated through.

On each tostada shell, layer lettuce, turkey mixture, cheese, tomato, and avocado. Serve immediately.

Double Cheese Pasta Primavera

From Kraft Foods.

Prep: 10 min. + optional marinating /  Cook: 20 min.
Serves 4.

1 pkg. (12 oz.) Shells and Cheese dinner
4 Tbs. Italian dressing, divided
1 cup broccoli florets
1 cup chopped red or green bell pepper (about 1 medium)
1 cup frozen baby peas
1 chicken breast, diced or sliced
¼ tsp dried basil
2 Tbs. grated Parmesan cheese

Marinate chicken in 2 Tbs. Italian dressing for 30 min (optional).

Cook over high heat until no longer pink. Prepare Shells and Cheese as directed on package. 

Meanwhile, heat 2 Tbs. Italian dressing in a large skillet on medium heat with chicken. Add broccoli and peppers; cook and stir 5 min. or until crisp-tender. Stir in peas; cook until heated through.

Add Shells and Cheese and basil. Mix.

Top with Parmesan cheese.

Notes:
- If you don't have time to marinate the chicken, it's okay to cook it up in the dressing instead.
- If you have fresh basil on hand, use 1 Tbs. instead of dried.
- Meatless Version: Omit chicken.  This recipe didn't originally call for it anyway!

Tender Chicken for Two

From Simple and Delicious (May/June 2007), page 21.

Prep/Total Time: 30-40 min.
Yield: 2 servings


¼ cup all-purpose flour
½ teaspoon salt
¼ teaspoon pepper
2 boneless skinless chicken breast halves (6 ounces each)
3 tablespoons vegetable or canola oil
½ cup chopped onions
½ cup sliced mushrooms
½ cup chopped green pepper
½ cup ketchup
¼ cup water
¼ cup sherry or chicken broth
Hot cooked rice

Place the flour, salt, and pepper in a large resealable plastic bag; add chicken and shake to coat. In a large skillet, brown chicken in oil over medium heat for 3½-4 minutes on each side. Remove and keep warm.

In the same skillet, sauté the onion, mushrooms, and green pepper until crisp-tender. Stir in the ketchup, water, and sherry or broth. Add chicken; cook, uncovered over medium heat for 14-16 minutes or until juices run clear and sauce is thickened.

Apricot Chicken

From Simple and Delicious (March/April 2006), page 33.

Yield: 4 servings

½ cup apricot preserves (or jam)
2 tablespoons soy sauce
1 tablespoon chicken broth or sherry
1 tablespoon vegetable oil
1 tablespoon cornstarch
1 teaspoon minced garlic
¼ teaspoon ground ginger
1 pound boneless skinless chicken breasts, cut into strips
1 medium green pepper, chopped
½ cup salted cashews
Hot cooked rice

In a large bowl, combine the first seven ingredients. Add chicken and toss to coat. Transfer to a shallow microwave-safe dish. Cover and microwave on high for 3 minutes, stirring once.

Add green pepper and cashews. Cover and microwave on high for 2-4 minutes or until chicken juices run clear, stirring once. Let stand for 3 minutes.

Serve with rice.

Nutrition Facts:
1 cup = 391 calories, 16 g fat (3 g saturated fat), 63 mg cholesterol, 673 mg sodium, 34 g carbohydrate, 2 g fiber, 28 g protein

Notes:
- I ended up having to microwave my chicken longer than it says, but that might be because my “shallow dish” was more of a not-so-shallow bowl.
- Unless you plan on not having leftovers, I would recommend adding the cashews just before eating. If they sit until the next meal, they’ll get soggy.

Walnut Chicken Skillet

From Quick Cooking (Jan./Feb. 2000), page 19.

Prep: 5-10 min + marinating / Cook: 15 min
Yield: 4 servings.


2 teaspoons cornstarch, divided
3 tablespoons soy sauce, divided
1 pound boneless skinless chicken breasts, cut into ¼ inch strips
1 tablespoon water
1½ teaspoons vinegar
1½ teaspoons sugar
Dash hot pepper sauce
½ cup walnut halves (I’ve used pecans)
3 tablespoons vegetable or canola oil
1 medium green pepper, cut into 1-inch pieces
½ teaspoon ground ginger
Hot cooked rice

In a bowl, combine 1 teaspoon of cornstarch and 1 tablespoon soy sauce until smooth; add chicken and toss to coat. Cover and refrigerate for 30 minutes.

Meanwhile, in a bowl, combine water, vinegar, sugar, hot pepper sauce, and remaining cornstarch and soy sauce; set aside.

In a skillet, sauté walnuts in oil until toasted; remove with a slotted spoon and set aside.

In the same skillet, stir-fry chicken until juices run clear. Remove and keep warm.

Add green pepper and ginger to skillet; cook and stir for 3 minutes or until pepper is crisp-tender. Stir cornstarch mixture; add to skillet. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly. Return chicken and walnuts to pan.

Serve over rice.

Pepper Jack Chicken Pasta

From Simple and Delicious (Sept./Oct. 2006), page 37.

Prep/Total Time: 30 min.
3 cups uncooked mostaccioli (penne pasta works just fine)
1 small onion, chopped
1 sweet red bell pepper, chopped
½ teaspoon minced garlic
1 tablespoon vegetable or canola oil
1 can (10.75 ounces) condensed Southwest style pepper Jack soup, undiluted
1 package (20 ounces) ready-to-use Southwestern chicken strips (Fajita-style work fine)
¾ cup water
1 can (15 ounces) black beans, rinsed and drained
¼ cup shredded Monterey Jack cheese, optional

Cook pasta according to package directions. Meanwhile, in a large skillet, sauté the onion, red pepper, and garlic in oil until tender. Stir in the soup, chicken, and water. Bring to a boil. Reduce heat; cover and simmer for 8 minutes.

Stir in beans; heat through. Drain pasta; add to skillet and toss with chicken mixture. Sprinkle with cheese if desired.

Notes:
- If you can't find the southwest pepper jack soup, you can use Campbell's fiesta nacho cheese soup and add several handfuls of shredded pepper jack cheese to achieve a similar flavor. If you can't find either of those, use cheddar cheese soup and up the added cheese.
- Instead of ready-to-use chicken strips, I thinly slice two half breasts (Sam's Club size) and saute them in a little oil with a tablespoon or two of taco seasoning. I tend to cook the chicken, onions, and garlic together, and then add the bell pepper when the chicken is almost cooked.
- Meatless Version: Omit chicken.  Increase bell peppers and black beans, or add another type of bean.

Nutrition Facts:
1 2/3 cups = 343 calories, 9 g fat (3 g saturated fat), 38 mg cholesterol, 753 mg sodium, 47 g carbohydrate, 5 g fiber, 22 g protein.
