Chili's Cajun Chicken Pasta

Adapted from the September/October 2019 issue of LDS Living Magazine.

The original recipe required the use of multiple pans (who has time for that?) and gave directions for seasoning and sautéing full chicken breasts before slicing them up and topping the pasta.  Hello, I've got a family of six--it's a lot easier to cut everything up and toss it together.  Another confession: I only sort of measured things.

We were big fans of this recipe, and my husband kept telling me how much he liked it.  It's got a good amount of spice and a creaminess that mellows it out just enough.  The tomatoes add a perfect brightness, not only in color but in flavor.

16 oz uncooked short-cut pasta (penne, rotini, etc.)
1-2 boneless skinless chicken breasts, cut into 1/2-inch chunks
4 tsp Cajun seasoning
1-2 Tbs. olive oil
1-2 Tbs. butter
3 cups half-and-half
1/2 - 1 tsp lemon pepper seasoning
1 tsp ground black pepper
1/2 tsp garlic powder
3 roma tomatos, diced
1/2 cup shredded Parmesan cheese

Cook pasta according to package directions.

Meanwhile, toss chicken with Cajun seasoning.  Sauté chicken in olive oil over medium heat until cooked through.  Remove from pan and set aside.

Add butter, half-and-half, lemon pepper, black pepper, and garlic powder to pan and bring to a low boil, scraping up any bits left from the chicken.  Reduce heat and simmer until silently thickened (about 10 minutes).  Stir in parmesan cheese until melted.

Drain pasta and add it to the sauce.  Add chicken and tomatoes.  Toss to coat.  Top with more parmesan cheese if desired.


Notes:
- I used a 5-quart sauté pan.
- May use 1 1/2 cups milk + 1 1/2 cups cream in place of half-and-half.
- Use whatever tomatoes you want, totaling about 1 cup (or your preference).
- The original recipe called for 1 tsp salt.  We prefer to salt our foods at the table, so I left it out.  If you really want to add salt to the recipe itself, add it with the other seasonings and start with 1/2 tsp.

Chicken Parmesan Sandwich

Inspired by Heidi's Brooklyn Deli.

During the last four years, it seems like some of our favorite things we've found in Vegas are places to eat.  One place we absolutely love is Heidi's Brooklyn Deli, which has become somewhat of a lunchtime tradition among the UNLV dental students.  The food (including the bread) is made fresh daily, and everything we've tried so far has been delicious.  Some of our favorite sandwiches are the chicken salad, the reuben, the Cajun turkey with avocado, and the chicken parmesan.  So good!  I love getting their chocolate chip cookies and macaroni salad, too (which is amazing because I'm not a macaroni salad person).  Whenever we make chicken parmesan, we use the leftovers in our imitation of the sandwich at Heidi's.
Marbled rye bread, sliced
Chicken parmesan, thickly sliced (at least 1/2 breast per sandwich)
Marinara sauce
Fresh mozzarella cheese, shredded

Spread a generous amount of marinara sauce on one piece of bread.  Layer chicken slices over marinara.  Cover with mozzarella cheese.  Toast chicken-covered piece of bread and empty piece (or broil in the oven if don't have a toaster oven) until bread is toasty and cheese is melted.  Put sandwich together, slice (if desired), and dig in!

Note:
- We like to use this recipe for chicken parmesan, which we got from a friend of ours.

Pizza Dough & Sauce

From Todd Wilbur's A Treasury of Top Secret Recipes, pages 281-282 and 438-439.

This is a combination of the California Pizza Kitchen crust and the Pizza Hut sauce, and it's delicious!  Make sure you start the night before so the dough has enough time to rise.
Our cheese got a little overcooked, but it was still yummy!
Prep: 20 minutes + rising/resting (4-5 hours and overnight) / Cook: 10-12 minutes
Yield: one 10" pizza


CPK Crust:
1/3 cup + 1 Tbs. warm water (105-115F)
3/4 tsp. yeast
1 tsp. sugar
1 cup bread flour
1/2 tsp. salt
1 1/2 tsp. olive oil

Start the day before you plan to serve the pizza.  In a small bowl or measuring cup, dissolve the yeast and sugar in the warm water.  Let it sit for 5 minutes until the surface of the mixture turns foamy.

Sift together the flour and salt in a medium bowl.  Make a depression in the flour and pour in the olive oil and yeast mixture.  Use a fork to stir the liquid, gradually drawing in more flour as you stir, until all the ingredients are combined.  When you can no longer stir with a fork, use your hands to form dough into a ball.  Knead the dough with the heels of your hands on a lightly floured surface for 10 minutes, or until the texture of the dough is smooth.

Form the dough back into a ball, coat it lightly with oil, and place in a clean bowl covered with plastic wrap.  Keep the bowl in a warm place for about 2 hours to allow dough to double in size.  Punch down the dough and put it back into the covered bowl and into your refrigerator overnight.

Take the dough from the refrigerator 1 to 2 hours before you plan to build the pizza so that the dough can warm up to room temperature.

Form the dough into a ball and roll out on a floured surface until very think and 10" in diameter.  Put your pizza crust on a baking sheet or pizza pan, spread with sauce and toppings of your choice, and bake at 500F for 10-12 minutes or until the crust is light brown.

PH Sauce:
1 can tomato sauce (15 oz)
1/4 cup water
1 tsp. sugar
1/4 tsp. dried oregano
1/4 tsp. dried basil
1/4 tsp. dried thyme
1/4 tsp. garlic powder
1/4 tsp. salt
1/8 tsp. ground black pepper
1 bay leaf
Dash onion powder
1/2 tsp. lemon juice

Combine all ingredients in a small saucepan over medium heat.  Heat the sauce until it starts to bubble, then reduce the heat and simmer, covered, for 30-60 minutes until it reaches the desired thickness.  When sauce has cooled, store it in the refrigerator in a tightly sealed container.

Notes:
- I kneaded my dough on a lightly floured Silpat-type silicone baking mat, and it was awesome!  The dough is somewhat sticky at first and stuck to my hands, but by the end of the 10 minutes, it was a smooth ball, and neither my hands nor the mat had any stray dough on them.
- The second time we made this pizza, we cooked it at 485 or 490 to keep the cheese from scorching, but the crust didn't get quite as crispy.  Just play around with it to find what you like.
- I have used the pizza sauce without allowing it to cool down, so don't worry if that's what you have to do, too!
- The sauce makes enough for a few pizzas, depending on how much sauce you like.

Mexican Chicken Pizza with Cornmeal Crust

Adapted from Eat Better America 2012 calendar.
Crust:
1 1/2 cups all-purpose flour
1 Tbs. sugar
1 1/4 tsp. regular active dry yeast
1/4 tsp. coarse salt (kosher or sea)
3/4 cup warm water
1 Tbs. olive oil
1/3 cup yellow cornmeal
Additional cornmeal

2 cups shredded Mexican cheese blend
1 1/2 cups shredded cooked chicken breast
1 can (14.5 oz) fire-roasted diced tomatoes
1 tsp. ground cumin
1 tsp. smoked paprika
1/4 tsp. chipotle chile powder (regular or Mexican varieties are good, too)
1/2 tsp. oregano
1/2 medium yellow bell pepper, chopped
1-2 sliced green onions
1/4 cup chopped fresh cilantro
1 avocado, diced
Sour cream

Heat oven to 450F.  In a medium bowl, mix 3/4 cup flour, sugar, yeast, and salt.  Stir in warm water and oil.  Beat with electric mixer on low speed for 30 seconds.  Beat on high speed for 1 minute.  Stir in 1/3 cup cornmeal and remaining flour to make a soft dough.

On lightly floured surface, knead dough until smooth and elastic, about 5 minutes.  Cover; let rest for 10 minutes.

Meanwhile, mix chicken with cumin, paprika, chile powder, oregano, and the juice from the tomatoes.

Spray a large cookie sheet with nonstick spray; sprinkle with additional cornmeal.  On cookie sheet, press dough into 10x14" rectangle; prick with fork.  Bake 8-10 minutes or until edges just begin to turn brown.

Sprinkle with 1 cup of the cheese blend.  Top with chicken, tomatoes, bell pepper, and green onions.  Sprinkle with remaining cheese.  Bake 6-8 minutes longer or until cheese is melted and edges are golden brown.  Top with cilantro, sour cream, and avocados.

Quick Fettuccine Cacciatore

From Kraft Food & Family (Spring 2006).
Prep: 10 min / Cook: 15 min
Serves: 4-6

8 oz fettuccine, uncooked
2 tsp. vegetable or canola oil
1 lb. boneless skinless chicken breasts, chopped
1 cup sliced green or red bell peppers
1 cup sliced mushrooms
1 can (14.5 oz) diced tomatoes, undrained
1/4 cup Italian dressing
1/4 cup shredded mozzarella cheese
1/4 cup shredded parmesan cheese
1/4 cup chopped fresh basil leaves

Cook pasta as directed on package.  Meanwhile, heat oil in large skillet on medium-high heat.  Add chicken; cook and stir until no longer pink.  Add peppers; cook 3 minutes, stirring occasionally.

Stir in tomatoes, mushrooms, and dressing.  Reduce heat to medium-low; simmer 5 minutes or until chicken is cooked through.

Toss pasta with chicken mixture.  Sprinkle with cheese and basil.

Notes:
- I chose to use no-salt added tomatoes and pureed them slightly.

Stuffed Zucchini

Adapted from Mel's Kitchen Cafe.

Yield: 6-8 servings
4 medium zucchini (about 8 oz each), stems removed
4 Tbs. olive oil
3 medium red potatoes (about 1 lb), cut into 1/2" cubes
1 small onion, diced
1 clove garlic, minced
3 medium tomatoes (about 1 1/4 lbs), seeded and chopped
1/3 cup shredded fresh basil leaves or 1 Tbs dried
6 oz (about 1 1/2 cups) Monterey Jack cheese, shredded
Salt and pepper

Adjust one oven rack to the upper-middle position and one to the lowest position, then place a foil-lined rimmed baking sheet on each rack.  Heat oven to 400F.

Meanwhile, halve zucchini lengthwise.  Using a small spoon, scoop out the seeds and most of the flesh so that the walls are about 1/4" thick all the way around.  Brush the cut sides with 2 Tbs of the oil and season with salt and pepper.

Toss the potatoes with 1 Tbs. olive oil and salt and pepper to taste.  Spread in a single layer on the hot baking sheet that has been preheating on the upper rack; return to oven.

Place the zucchini halves, cut-side down, on the hot baking sheet that has been preheating on the lower rack; return to oven.  Roast the zucchini until slightly softened and skins are slightly wrinkled, about 10 minutes, while simultaneously roasting the potatoes until they are tender and lightly browned, 12-14 minutes.

When the zucchini has finished roasting, remove it from the oven using tongs, flip the zucchini halves over on the baking sheet, and set aside.

While the zucchini and potatoes are roasting, heat the remaining 1 Tbs. oil in a large skillet over medium heat until shimmering, about 2 minutes.  Add the onion and cook, stirring occasionally, until softened and beginning to brown, about 10 minutes.  Stir in the garlic and cook until fragrant, about 30 seconds.  Add the tomatoes and cooked potatoes; cook, stirring occasionally, until heated through, about 3 minutes.  Remove from heat and stir in basil, 1/2 cup cheese, and salt and pepper to taste.

Divide filling evenly among zucchini halves on the baking sheet, packing it lightly; sprinkle with remaining cheese.  Return the zucchini to the oven, this time to the upper rack, and bake until heated through and cheese is spotty brown, about 6 minutes.  Serve immediately.

Notes:
- I felt like the zucchini flesh was going to waste, but I was so preoccupied with everything else I was making for dinner that I forgot about it.  I wonder how it would be to chop it up and add at least some of it back in with the onions and garlic.
- The original recipe uses 1 whole medium onion and 5 large cloves of garlic.
- Perhaps pepper jack cheese would be yummy, too.

Southwest Sourdough Chicken Panini

We came up with this recipe based on ingredients we already had on hand, and it turned out to be delicious!  Matt has said multiple times how much he liked it.
Prep: 10 min / Cook: 5 min.
Yield: 3 sandwiches

6 slices sourdough bread
1 tomato, sliced
6 slices pepper jack, Monterey jack, or provolone cheese
3 tsp. diced green chilies
1/3 cup mayonnaise
1/2 tsp chipotle adobo sauce, or to taste
Grilled chicken, sliced (we prefer to use this Southwest rub)

Mix together mayonnaise and adobo sauce.  Spread on each slice of bread.  Cover with cheese slices.  Spread diced green chilies on half of each sandwich (so 3 slices of bread).  Place chicken and tomato slices over chilies.  Cover with other half of sandwich.

Grill in a panini press for about 5 minutes on high, or until cheese has melted and bread is golden and crispy.  You may also make these in a skillet, flipping them over to grill both sides.

Notes:
- I recommend starting with a little less adobo sauce and adding more until it reaches the heat you'd like.  You can chop up part of a chipotle pepper to mix in with the mayo, too, if you like.
- We used some leftover grilled chicken that had been seasoned with a delicious southwest rub.
- Instead of making your own chipotle mayo, you can buy it at the store if you like.

Shrimp Enchiladas

Adapted from Mel's Kitchen Cafe.

Prep: 20-30 min / Cook: 30-35 min.
Yield: 8-10 enchiladas

Cheese Sauce:
1/2 red bell pepper, chopped
1/2 green bell pepper, chopped
1/2 small onion, diced
2 Tbs. butter
1/2 tsp. oregano
1/2 tsp. salt (optional)
1/4 tsp. garlic powder
1/4 tsp. cayenne pepper
1/4 tsp. black pepper
1 Tbs. flour
3/4 cup fat-free half-and-half
1 1/2 cups Monterey Jack or Pepper Jack cheese
1/2 cup reduced-fat sour cream

Enchiladas:
2 Tbs. butter
1 1/2 lbs. shrimp, peeled, deveined, and chopped into bite-size pieces
2 cups chopped ripe tomatoes
1/2 red bell pepper
1/2 green bell pepper
1/2 small onion, diced
1 1/2 cups Monterey Jack or Pepper Jack cheese
8-10 soft taco size flour tortillas

To make cheese sauce, saute peppers and onion in butter until crisp-tender.  Add oregano, salt, garlic powder, pepper, cayenne pepper, and flour; blend well and cook, stirring constantly for about a minute.  Whisk in half-and-half and continue cooking for 3 minutes, or until slightly thickened.  Add cheese; stir until melted.  Add sour cream; stir to blend.  Set aside.

In another skillet, melt butter.  Saute onion and peppers until crisp-tender.  Add shrimp; saute until pink (don't overcook!).  Add tomatoes and 1/2 of the cheese sauce.  Spoon about 1/3-1/2 cup shrimp mixture into each tortilla.  Sprinkle a bit of cheese on top of filling, leaving some to sprinkle on top of enchiladas.  Roll the enchiladas up tightly.  Arrange seam side down in a 9x13" glass baking dish.  Spoon remaining cheese sauce over tortillas and sprinkle with remaining cheese.

Bake at 350F for 30-35 minutes.

Notes:
- Don't forget to add the cheese into the enchiladas.  I forgot that step and had to go back and unroll each one to add it--not easy when they've already absorbed some of the liquid from the filling.  They weren't pretty, hence no picture.
- The original recipe uses whipping cream and regular sour cream, which I'm sure makes richer enchiladas.  Having jumped straight to the no-fat and low-fat ingredients, I have nothing to compare it to.
- If you use small shrimp, I don't see why you'd need or want to chop them up.

Oven-roasted Tomato Salsa

Yield: 3 pints
6-7 lbs. fresh tomatoes, cut into wedges
4 anaheim peppers, quartered
4 cloves garlic, finely chopped
1 medium red onion, halved and cut into wedges
1-2 serrano chiles, quartered
1/4 cup olive oil
2 tsp. kosher salt
Freshly ground black pepper
1 tsp. ground cumin
2/3 cup chopped cilantro
3 limes
2 Tbs. cider vinegar
2 tsp. brown sugar
1 tsp. oregano

Line two rimmed baking sheets with foil.  Preheat oven to 400F.

Mix tomatoes, garlic, anaheim peppers, serrano chiles, and onion in a large bowl.  Toss with olive oil, salt, and pepper.  Remove to baking sheets using slotted spoon; reserve liquid.  Bake for 1 hour.  Let cool to the touch.

Add half of vegetables to a food processor and puree until mostly smooth.  Pour into a bowl and set aside.  Add remaining vegetables to food processor and pulse until it reaches desired consistency.

Pour reserved liquid into a large pot and bring to a boil.  Add cumin, brown sugar, oregano, lime juice, vinegar, and cilantro.  Reduce heat and simmer 5 minutes.

Add both vegetable mixtures to pot.  Stir and heat through.  Season to taste with salt and pepper.

Store in refrigerator.

Notes:
- It's been a little while since I created this recipe, and so I don't remember if the version I wrote down was the one I actually made or the one I thought would be better.  If you're not very fond of spicy, only use 1 serrano chile, perhaps not even the whole thing.

Makeover Taco Soup

Yield: 7 cups

1 lb. lean ground turkey
1/2 medium red onion, diced
8 oz. no-salt added-tomato sauce
1 (14 1/2 oz) can fire-roasted diced tomatoes, undrained
1 (15 1/2 oz) can no-salt-added or low-sodium whole kernel corn, undrained
1 (15 1/2 oz) can no-salt-added or low-sodium kidney beans, undrained
3 1/2 Tbs. Homemade Taco Seasoning Mix
1-2 cups water

Garnishes:
Shredded cheese
Fritos
Light or fat free sour cream OR plain, fat-free Greek yogurt

Brown turkey and onion; drain.  Add tomato sauce, tomatoes, corn, beans, taco seasoning, and water.  Cover and simmer 20 minutes, stirring occasionally.

Nutrition Facts:
1 cup (no garnishes) = 225 calories, 5.32 g fat (1.2 g saturated fat), 37 mg cholesterol, 304 mg sodium, 25.2 g carbohydrates, 7.3 g dietary fiber, 9 g sugar, 19 g protein

Notes:
- The nutrition facts listed use no-salt-added corn and reduced sodium kidney beans.  Amounts will actually vary by brand.

The Champ (Turkey & Brie Panini)



We made these paninis in honor of one that Matt ate at Champ's Deli when we were in New York two years ago (hence the name).  All we could remember (or find out) was that it had turkey, brie, and honey mustard.  It is very simple, but also very tasty!

Prep: 5 min./Cook: 5 min.
Yield: 2 sandwiches


3 slices (4 oz. total) Columbus Herb Roasted Turkey lunchmeat
12 thin slices Brie cheese (or however many it takes to cover the faces of your bread)
1 sliced tomato
2 Ciabatta buns
2 Tbs. mayonnaise
1 Tbs. mustard
1 Tbs. honey

Mix together honey, mustard, and mayonnaise.  Spread on both cut sides of each bun, then cover with Brie.  Add tomato and 1 1/2 slices of turkey to each sandwich.

Cook in a contact a grill or panini press set to sear for 5 minutes or until cheese is melted and bread is toasty, applying slight pressure to press the bread.

Slice and enjoy!

Notes:
-  You can use whatever turkey you want, but I have to say that Columbus is my all-time favorite brand of turkey lunchmeat.  It's more expensive than other brands, and I've only seen it at Costco.  But it honestly tastes like Thanksgiving turkey, is 99% fat free, and is MUCH lower in sodium than other brands (we're talking 220 mg per 2 oz serving instead of the usual 500-700 mg).  It's worth it.
- Brie is one of those cheeses that is on the list of foods to avoid for pregnant women and small children; however, if you find a pasteurized Brie (our Costco carries a Henri Hutin Brie Couronne), then it's safe for both pregnant women and toddlers.
- Feel free to alter the amounts of mayo, honey, and mustard--to be honest, I didn't measure, so those amounts are complete guesses.  Dijon mustard also makes a very good honey mustard.

California Burger

From Bobby Flay's Burgers, Fries, & Shakes, page 34.

Makes 4 burgers.
Avocado Relish:
2 ripe Haas avocados, halved, pitted, peeled, and coarsely chopped
1/2 small onion, finely diced
1 jalapeno chile, finely diced
Juice of 1 lime
Kosher salt & freshly ground black pepper

Burgers:
1 1/2 lbs. ground chuck (80/20) or ground turkey (90/10)
Kosher salt & freshly ground black pepper
1 1/2 Tbs. canola oil
4 slices Monterey Jack cheese
4 hamburger buns, split; toasted, if desired
1 small bunch of watercress
4 slices ripe beefsteak tomato

To make the avocado relish, combine the avocados, onion, jalapeno, lime juice, and cilantro in a small bowl and season with salt and pepper. The relish can be made up to 1 hour in advance and kept at room temperature.

Divide the meat into 4 equal portions (about 6 oz. each). Form each portion loosely into a 3/4"-thick burger and make a deep depression in the center with your thumb. Season both sides of each burger with salt and pepper.

Cook the burgers, using the oil and topping each one with a slice of cheese and a basting cover during the last minute of cooking. (Click HERE to see Bobby's cooking times for burgers.)

Place the burgers on the bun bottoms and top each one with a few sprigs of watercress, a slice of tomato, and a dollop of the avocado relish. Cover with bun tops and serve immediately.

Notes:
- I use less oil because I cook in a nonstick pan.
- I also make thinner burgers because I buy big buns and I like the burger to be in every bite.

Southwestern Turkey Soup

Adapted from AllRecipes.com, submitted by Doug Matthews.
Serves 8 (each serving is 1 1/2 cups).

Prep time: 30 minutes (less if the meat is already cooked).
Cook time: 30-40 minutes.

Only 210 calories per serving! (Though it depends on the brands, etc. that you use.)  Goes great with corn muffins!
1 1/2 cups shredded cooked turkey
4 cups vegetable broth
1 (28 oz) can petite diced tomatoes
1 (15 oz) can black beans, rinsed and drained
1 (4 oz) can diced green chiles
2 roma tomatoes, chopped
1/2 medium yellow onion, diced
1/2 medium red onion, diced
2 cloves garlic, crushed
1-2 Tbs. lime juice
1/2 tsp. cayenne pepper
1/2 tsp. ground cumin
1 avocado, peeled, pitted, and diced
1 Tbs. fresh, chopped cilantro
1 cup shredded Monterey Jack cheese
Salt & pepper to taste

Puree or blend half the can of tomatoes.

In a large pot over medium heat, combine turkey, broth, canned tomatoes, green chiles, fresh tomatoes, onion, garlic, and lime juice. Season with cayenne pepper, cumin, salt, and pepper. Bring to a boil, then reduce heat and simmer 15-20 minutes.

Stir in avocado, black beans, and cilantro and simmer 15-20 minutes, until slightly thickened. Spoon into serving bowls and top with shredded cheese.

Notes:
- I used 2 cups shredded chicken instead of turkey because that's what I had.
- I put the garlic through a garlic press instead of just crushing it.
- Before adding everything to the pot, I sauteed the garlic and onions in some water until they were a little soft.
- The soup wasn't as spicy as I thought it would be, but it tasted good. It left me with a hint of heat after I finished the bowl. I might consider adding a little bit more next time.  My mom added 1 diced jalapeno, seeds and membranes removed.

Taco Soup

From Mom Larsen.

Serves: 4-6
1 lb. hamburger, browned and drained
1 onion, chopped and browned with hamburger
1 8-oz. can tomato sauce
1 14½-oz. can cut-up tomatoes, undrained (Mexican style is best)
1 15½-oz. can whole-kernel corn, undrained
1 15½-oz. can kidney beans, undrained
1 package taco seasoning (try using Homemade Taco Seasoning Mix)

Garnishes:
Shredded cheese, Fritos, sour cream or fat-free Greek yogurt

Put first 7 ingredients into a large saucepan and simmer for 20 minutes. You will probably want to add 1-2 cups of water for a mores soupy consistency. To serve, put soup in individual serving bowls and sprinkle with cheese and Fritos. Add a dab of sour cream.

Notes
- We recently used fire-roasted diced tomatoes (I think the brand was Dole).  So delicious!  The tomatoes were softer and added a sweeter flavor to the soup.
- Next time we make this, we're going to try it with black beans instead of kidney beans.

Larry's Chili

In a crock-pot or large pot, add the following ingredients and turn on to a medium setting:

3 15-oz. cans of small red beans
3 15-oz. cans of Mexican-style stewed tomatoes
1 15-oz. can of Beef Consommé (or beef bouillon or beef broth)
1 small can (about 3 or 4 oz.) diced, green chilies
3 Tbs. chili powder (2 Tbs. for a milder flavor)
1 Tbs. ground cumin
Salt & pepper to taste (suggested: 1 tsp. salt & 1/2 tsp. black pepper)

Meanwhile, brown the following in a skillet:

1 medium yellow onion, chopped
1 lb. lean ground beef
1 Tbs. olive oil (omit if hamburger is not lean)

After hamburger is browned and onion is cooked, drain off excess fat. Add hamburger and onion to crock-pot.

Cook for 1 hour or more.

Note:
- When small red beans or poquito’s are not available, use kidney beans. May use a combination of kidney and small red beans, if desired.

Turkey Tostadas

Prep/Total Time: 25 min.
Yield: 6 servings


1 package (20 oz.) lean ground turkey
½ cup chopped onion
½ cup chopped green pepper
1 tsp. vegetable or canola oil
¾ cup water
1 envelope taco seasoning (or 3 1/2 Tbs. Homemade Taco Seasoning Mix)
1 can (15.5 oz.) hominy, rinsed and drained
12 tostada shells
3 cups shredded lettuce
1 cup (4 oz.) shredded Mexican cheese blend
1 cup chopped tomato
1 cup cubed avocado

In a large skillet, cook the turkey, onion, and green pepper in oil over medium heat for 5 minutes or until meat is no longer pink; drain. Stir in the water, taco seasoning, and hominy. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes or until heated through.

On each tostada shell, layer lettuce, turkey mixture, cheese, tomato, and avocado. Serve immediately.
